Lemon Garlic Chicken
 
 
One of the easiest and tastiest crock pot chicken recipes in the history of ever! Serve with veggies, or mix it up with Asian style sides- this stuff is addictive. This recipe is inspired from the Lemon Garlic Chicken recipe from the Chicken Dump Cookbook by Sharla Kostelyk. The idea is to quickly assemble several meals to use, freeze, or gift. The ingredients below will make one large family meal using a 2.5-3 pound bag of chicken. You can easily divide this into smaller bags for smaller families, singles, or couples.

Serves: 6-8 servings
Ingredients
  • 6-8 chicken breasts or 8-10 boneless, skinless chicken thighs
  • 4-6 cloves of garlic, minced
  • 2 tablespoons chopped fresh parsley
  • ⅓ cup olive oil
  • 1½ lemons, juiced
  • ½ teaspoon pepper
Instructions
  1. Label your gallon zippy bag with the recipe name and cooking instructions.
  2. Fold down top of bag so that it will stand upright while you fill it.
  3. Add all ingredients to bag.
  4. Press out air and seal.
  5. Refrigerate for up to 2 days, or freeze flat. Cooking Instructions
  6. Thaw bag in the fridge. I like to place it in a casserole dish to prevent leaking.
  7. Dump bag into crock pot, and cook on low for 4-6 hours.
  8. OR bake in a casserole dish at *350 for 35-45 minutes, or until chicken is thoroughly cooked through.
Notes
Trim Healthy Mama Notes:
This recipe is an S as written, but you can alter it to use as a lean protein source with E or FP meals. Simply use boneless skinless breasts, and reduce oil to 2 tablespoons for the entire recipe.
