Sugar Free Brownie Batter Bites [S]
 
 
If you're in the mood for something quick and naughty and chocolatey, this brownie batter is a great fix. It's so simple to mix up a batch, and I portioned it out into bites with a small scoop.

Ingredients
  • ½ c. coconut butter (I want to try almond butter or peanut butter versions)
  • 3 T. cocoa
  • ½ c. butter, softened
  • ¼ c. sugar free brown sugar
  • ⅛ tsp. salt
  • 1/16 tsp. nutmeg
  • 1 tsp. vanilla extract
  • Chopped pecans or walnuts (optional)
Instructions
  1. If you already have coconut butter or manna, then you're in luck. If you have just plain unsweetened coconut, it only takes 20 minutes in a food processor. 2 cups of shredded coconut yielded ½ cup of coconut butter for me.
  2. Blend coconut, cocoa, butter, and all other ingredients in a small cup or bowl.
  3. Enjoy the rich taste of brownie batter a bite at a time when a chocolate craving hits, OR portion out with a small cookie scoop and chill into bites.
Notes
My scoop yielded 18-20 bites. If you really dislike the taste of coconut, then opt for grinding unsalted almonds instead, as there is a slight coconut taste.
