Fruit Pizza is a fantastic summer dessert. A crisp cookie crust is topped with cream cheese frosting and lots of fresh fruit. You can choose any fruit topping that you'd like...apples with a caramel drizzle would be lovely as well.
Recipe type: Dessert
Serves: 12
  • 2 cups flour
  • ⅔ cup powdered sugar
  • 2 sticks salted butter
  • 2, 8 oz. packages of cream cheese, softened
  • ⅔ c. granulated sugar
  • 1 t. vanilla extract
Fruit:A variety of fresh fruits of your choice, sliced thin. I use an egg slicer for strawberries and kiwi, but leave the blueberries whole. We love
  • strawberry
  • blueberries
  • kiwi
  • peaches
  • 2 T strawberry jam thinned with 1 t warm water
  1. Combine sugar and flour and cut in butter until crumbly**.
  2. Press into a 12 inch pizza pan.
  3. Bake at 350* for 12-15 min or until very lightly brown.
  4. Allow to cool completely
  5. Frost cookie with cream cheese frosting:
  6. Blend ingredients until creamy, and spread over your fruit pizza.
  7. Top with sliced fresh fruit, arranged in a spiral pattern, or just scattered thickly on top.
  8. Spread with glaze to keep fruit fresh.
  9. Chill until serving time.
  10. Cut in wedges to serve.
**This looked so crumbly that I didn't think it would set in the oven, but it's basically a shortbread...it turned out really yummy and sturdy.
These are my most awesomely naughty recipes!
