A fast and easy ground beef recipe that your family will love!

  • 1 pound ground beef
  • ½ large onion, diced
  • ⅓ cup barbecue sauce (your favorite flavor)
  • ⅓ cup ketchup
  • 1 tablespoon yellow mustard
  • ½ teaspoon pepper
  • 2 cups cooked rice, white or brown if you wanna stay trim & healthy.
  • 1 cup shredded cheddar cheese
  • ⅓ cup dill pickle relish or diced pickles
  • 5 bacon strips, cooked and crumbled
  • water
  1. In a large oven proof skillet, fry bacon until crispy. Drain pan, but don’t wipe it out. Toss in the ground beef and onion; brown and drain.
  2. Add barbecue sauce, ketchup, mustard and pepper to beef mixture.
  3. Stir in cooked rice and enough water to moisten well. Heat through.
  4. Preheat broiler on low.
  5. Sprinkle top of beef mixture with cheese, and put under broiler until cheese is melted. Sprinkle with pickles and bacon; serve immediately
Time saver tips: Put dinner on the table faster by doing any or all of the following earlier in the week:
Make extra rice earlier in the week so you can use the leftovers in this dish.
Fry extra bacon with breakfast or if required in another recipe. Store the crumbled leftovers in the fridge. Add the bacon crumbles on top of the cheese and let them warm/crisp under the broiler.
Pre-brown ground beef and chopped onions and store in the freezer in one pound bags. This is a great time saver, as you can toss together tacos, sloppy joes, beef stroganoff, chili, or this yummy dish in minutes!
