Roasted Radishes
 
 
Roasted radishes are super easy...I love these plain as a side dish or in a mix of veggies with a savory sausage thrown in for a one dish meal.

Ingredients
  • 1 bunch or bag of radishes (15-20)
  • 1-2 Tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
Instructions
  1. Line a baking sheet with foil or parchment paper (optional but easier clean up).
  2. Preheat oven to 400*
  3. Wash and remove leaves. Slice radishes into quarters.
  4. Place quarters into a bag or bowl and toss with oil and spices.
  5. Arrange cut sides down on a prepared baking tray.
  6. Bake for 25-30 minutes, and stir.
  7. Bake for a remaining 15 minutes, or until nicely browned.
Notes
For Trim Healthy Mama plan, these pair nicely with S meals, or if you want to keep them in FP mode, use only 1 tablespoon of oil and divide into 4 or more servings.
