This egg recipe is my very favorite way to enjoy eggs and toast together, and bonus: it's low carb! And healthy! Nothing beats buttery fried bread.

Serves: 1 serving
Ingredients
  • 1 slice of sprouted wheat bread (THM), or any bread of your choice (non-THM)
  • 2 teaspoons butter
  • 1 egg
  • salt & pepper to taste
  • 1 Tablespoon shredded parmesan or cheddar cheese
Instructions
  1. Toast bread and preheat broiler
  2. Melt butter in an oven proof skillet over medium heat on the stove.
  3. When toast is ready, cut out a hole just larger than the yolk. About 1½ inches. I like to use a cookie cutter, but a knife works too. If you're wanting to remain in S territory, don't eat the cut out!
  4. Over the melted butter, add salt and pepper, your tablespoon of shredded cheese, and the bread.
  5. Pan fry until the cheese is brown around the edges, and flip.
  6. Add your egg to the center hole in the nest. I cut the crispy cheese away to get it all the way in there. I also like to slightly lift the toast a bit to get most of the white underneath.
  7. Add a few more shreds of cheese around the egg, and salt & pepper.
  8. Slide under the broiler to finish cooking your egg until the white is set and the yolk is how you like it.
Notes
Nutrition Notes/THM: For my sprouted bread and ingredients, I figured 10 grams of net carbs (if you don't eat the cut out piece!) and 22 grams of fat.
If you do eat the whole slice of bread, I figured it at around net 11.5 carbs
