Special Equipment

Most of my recipes don’t really require any special equipment at all. A couple call for a blender, but I think most kitchens are already equipped with those. Outside of that, a good roasting pan for a full bird, and just basic knives, saucepans, and rubber scrapers will keep you rolling. There is ONE essential piece of equipment that I highly recommend for roasting a turkey or turkey breast:

Marinade Injector: You can find these in the marinade section of most grocery stores and sometimes in the cooking gadget aisle. Or you can grab a really nice stainless steel version from Amazon. 

I’ve used the plastic kind for years, but I added the stainless steel to my wish list this year. Because my love language is kitchen gadgets. 🙂

Special Ingredients

Ninety percent of the ingredients I use in my own kitchen are found locally, but low carb baking and thickening does require using some different ingredients to get a similar texture and ensure good end result.

Essential Oils as Flavorings

orange dream recipe (1 of 1)I’m a huge fan of using a few food based pure, great quality essential oils as flavoring agents in my recipes, since it only takes a drop or two to deliver incredible flavor. I am able to get vivid and genuine orange flavor without resorting to high carb orange juice.

I recommend using a cold pressed orange oil to the sparkling gelatin salad in the book. I like the following brands:

  • Plant Therapy
  • NOW essential oils
  • Mountain Rose Herbs

Special Ingredients

Here are a few ingredients that I stock my pantry with for holiday cooking. Ordering online saves me time and money for these products, and items like the glucomannan and stevia extract last me for months to over a year because they’re used in such tiny quantities.

A note on Trim Healthy Mama products: I highly recommend their sweeteners and Baking Blend! They also sell glucomannan, and other great carb smart ingredients in their online store. You do not have to use their products to make the recipes in this book, but I love to use them, and mention them or a sub in many recipes.

  • Glucomannan or an alternative low carb thickener for the gravy. Xanthan gum is also a good choice.
  • Gelatin: I really prefer a good grassfed beef sourced gelatin like the Trim Healthy Mama Gelatin. Different brands set with varying firmness, so you may consider doing a test run with the gelatin of your choice.
  • Low glycemic sugar substitutes like Xylitol and Erythritol. I also really love the Trim Healthy Mama Sweet Blend, or Gentle Sweetbaking blend
  • Oat Fiber or Low Carb Baking Mix– I’m partial to the Trim Healthy Mama Baking Blend. But you can also find several good Low Carb Baking Mix recipes online now, so you can make your own!
  • Oat Flour is called for in one recipe, and is made easily from blending an equal amount of old fashioned oats.

Mushroom Cubes Recipe– I love this recipe. It makes the equivalent of a dozen cans of cream of soup, in the convenient form of a drop in flavor cube. Just add the milk & thickener!
