    I have done a chocolate & peanut butter version before by replacing the (dairy) butter in this recipe with peanut butter. It is yummy too. And it makes it dairy free, for those who have dairy allergies.

    I just made this, just now. It’s like you knew I ‘needed’ it. 😉 And the batter might not get made into bites… I’m liking it as is.

    Quick question- you say making the coconut butter takes only 20 minutes in a food processor? Is that a typo and supposed to say 2 minutes? or do you really keep the processor running for 20 minutes? I’m thinking that might blow the motor 🙂 Thanks in advance.

      Not a typo…it does take twenty minutes to go from flakes to butter. You can check out the link I put in to the recipe. 🙂
      My old Cuisinart food processor was pleasantly warm when it was done.

        I should have read it more carefully. Sorry.
        I just made these and they are very good. I would have definitely stopped before the time was up in making the coconut butter if I hadn’t read about it on your blog.
        I tried my Ninja Blender first, but it was too hard to keep scraping it down. So I switched over to my trusty Hamilton Beach FP didn’t even break into a sweat 🙂

    Can I use coconut oil instead of butter? I can’t find that very easily around here.

      No, coconut oil wouldn’t work. But you could do as Gwen did and make your own coconut butter.

    Just made these and they are soooo good! BUT…mine are sugar crunchy. Did I do it right and they will just be a bit gritty?

      The only way I can think of to prevent that is to grind your sugar substitute to a powder, or to dissolve it in a little water before adding it. (I am not on THM so I just use honey.)

    How many would be wise for an S snack? If I paired it with some FP greek yogurt, how many for a quick S lunch?

      They’re so rich that 1 or 2 is plenty for me. I try to get veggies in for lunch & dinner. My fave is a salad with grilled chicken or crispy salmon & other veggie toppings, olive oil, and then I’d have one of these for a dessert. 🙂

          I’ve not tried them frozen. They may be too hard to bite. I bet they’d be good in the fridge though!

    Just made this with almond butter and it is almost too salty to eat. I made the recipe exactly the same otherwise, with 1/8 t. Salt. Trying to figure out what to do to salvage it. Definitely has potential!

    I am wondering what can go in place of the coconut butter. Any other nut butter? Probably not the canned coconut milk, thickened in the fridge either?

      Hmmm…I would imagine a nut butter would work here if you wanted a peanut butter or almond brownie flavor. Sounds yummy to me!

      You grind unsweetened coconut in a food processor until it’s creamy. 🙂

    I just made these and they are pretty good! I used almond butter instead of coconut and added a pinch of stevia. Maybe a “doonk”? Tasted really similar to regular brownie batter. 🙂

    I just made these, and the batter is not very thick! I dont know how I can make these into pieces…I may have to just eat it as batter! What did I do wrong???

      Cool it down in the fridge for a bit…coconut oil can turns to a liquid at a warm room temp. After chilling them, you should be able to scoop them into shapes. 🙂

      Ooh, not sure. I’ve never done a Fuel Cycle. I bet you could ask on one of the Fuel Cycle groups on Facebook! 🙂
