This THM easy Summer Menu is perfect for the hot, busy days of summer. And of course by busy, I mean that I’m busy being lazy. So all of these meals are minimal prep and next to no sweating in the kitchen. Because who has time for that?
I know not all of my readers are basking in the warmth of summer yet, but it’s coming your way, and you’ll be ready for some full fledge basking and lazy days with an equally lazy dinner menu. I’ve got you covered! I’m also at a place where I need simple ingredients that I can find at my local stores. Hence the “easy” part of the title. 🙂
And here’s a great extra little tip to make your summer even simpler: make extra servings of your main dish to serve for lunch the next day! If you’re not a big fan of leftovers, just refashion those chicken strips into a yummy giant lunch salad.

I’ve been limited by fridge space, so we have it at most 2x a week. Not sure if there’s an E meal limit? I think you just “freestyle” and enjoy as many as works for you. 🙂
