Sometimes, I like chocolate. And when I say “like”, what I really mean is “need”. And sometimes I’m sort of lazy. This sugar free brownie batter bites recipe is my prescription for such times of dire need.Not only is the batter very quick to mix up for an instant chocolate fix, but it’s SO rich & satisfying that I just enjoy it in bites here and there. So I scooped the batter into little serving size portions. Aren’t they the cutest things ever?

or just enjoy it straight from the mixing bowl. It’s all cool.
This recipe was posted by my buddy White Rock. She’s like the super hero of creating lazy chocolate dessert, but I know her secret identity. Here are some of the ingredients she used to whip up this brownie batter treat that she calls brownie butter:
You’ll need cocoa, some sort of butter (coconut is what I used, but I also want to try almond & peanut butter versions), real butter…the kind from a cow, my sugar free brown sugar, a sprinkle of nutmeg, a pinch of salt, and vanilla extract. And nuts if you’re in the mood.
Really all it takes is to swirl it all together in a cup. I doubled the recipe, and I made my own coconut butter from unsweetened coconut that I ground in my food processor for about 20 minutes.

And you can add nuts too if that floats your boat!Now, clearly, this can be dangerous stuff. But guess what…for me, I find that enjoying *real* fats like this makes it very filling and hard for me to overindulge. It’s super satisfying- not like the really sugary treats that just seem to get my appetite more revved. If you know that portion size is a big deal for you, then try them scooped into little bites, and just savor one or two at a time.
This is a sugar free “S” for all of you that are following the Trim Healthy Mama plan. I doubled the recipe that White Rock shared, and then used my smallest stainless steel cookie dough scoop that holds a tablespoon of batter, and dropped them onto a plate & chilled. I got about 18-20 Brownie Batter Bites, in a fun portion size.
I think it tastes a lot like brownie batter. Unless you’re 14, and are used to eating real sugar and your Mom makes you taste some brown goop that’s sugar free…then it’s not as impressive. But I’m totally loving on it.

- ½ c. coconut butter (I want to try almond butter or peanut butter versions)
- 3 T. cocoa
- ½ c. butter, softened
- ¼ c. sugar free brown sugar
- ⅛ tsp. salt
- 1/16 tsp. nutmeg
- 1 tsp. vanilla extract
- Chopped pecans or walnuts (optional)
- If you already have coconut butter or manna, then you're in luck. If you have just plain unsweetened coconut, it only takes 20 minutes in a food processor. 2 cups of shredded coconut yielded ½ cup of coconut butter for me.
- Blend coconut, cocoa, butter, and all other ingredients in a small cup or bowl.
- Enjoy the rich taste of brownie batter a bite at a time when a chocolate craving hits, OR portion out with a small cookie scoop and chill into bites.

I have done a chocolate & peanut butter version before by replacing the (dairy) butter in this recipe with peanut butter. It is yummy too. And it makes it dairy free, for those who have dairy allergies.

Quick question- you say making the coconut butter takes only 20 minutes in a food processor? Is that a typo and supposed to say 2 minutes? or do you really keep the processor running for 20 minutes? I’m thinking that might blow the motor 🙂 Thanks in advance.

I just made these and they are very good. I would have definitely stopped before the time was up in making the coconut butter if I hadn’t read about it on your blog.
I tried my Ninja Blender first, but it was too hard to keep scraping it down. So I switched over to my trusty Hamilton Beach FP didn’t even break into a sweat 🙂

No, coconut oil wouldn’t work. But you could do as Gwen did and make your own coconut butter.

The only way I can think of to prevent that is to grind your sugar substitute to a powder, or to dissolve it in a little water before adding it. (I am not on THM so I just use honey.)

They’re so rich that 1 or 2 is plenty for me. I try to get veggies in for lunch & dinner. My fave is a salad with grilled chicken or crispy salmon & other veggie toppings, olive oil, and then I’d have one of these for a dessert. 🙂

I just made these and they are pretty good! I used almond butter instead of coconut and added a pinch of stevia. Maybe a “doonk”? Tasted really similar to regular brownie batter. 🙂

Cool it down in the fridge for a bit…coconut oil can turns to a liquid at a warm room temp. After chilling them, you should be able to scoop them into shapes. 🙂
