When I was a kid, we lived less than a mile from a Big Star grocery store, and I would walk up there at least once a week with my allowance to score some treats.
I usually went for the candy aisle, but one week, a 3 pack of giant streusel orange muffins caught my eye. Oh. My. Lands. I fell in love. Over the years, I had more than my fair share of those orange streusel muffins. They were one of my favorite breakfast items in college. Picking really tasty junk food is like my spiritual gift. In my lack of understanding of nutrition, I was thinking: Muffins are healthy! At least healthier than eating cake or candy, right?Um, nope. Caloriecount.com gives this particular orange muffin a D…the lowest grade on the list of this companies entire line of products, and the same grade as the white chocolate macadamia nut cookies. Even the double chocolate chip cookies, and peanut butter reese’s cup cookies scored higher.
Those big boys pack in 230 calories per serving…and the serving is half of a muffin. I’ve never in my life eaten half of a muffin, and I don’t intend to start now.
I also don’t intend on ever eating one of those orange streusel muffins again, since I now have THESE.
This orange streusel muffin recipe is low carb, sugar free, grain and gluten free, and SO AMAZING! And I can eat the WHOLE thing if I want to. Glory be.
If you’re following the Trim Healthy Mama plan, the beauty of this particular recipe is that you can make it a FP, and add some fruit to it to create an E (energizing healthy carb breakfast), OR you can use healthy fats and enjoy it as a satisfying S breakfast or snack.
My Streusel Orange Muffin Recipe
Now, taking a recipe that’s FULL of white flour, junky fats, and mega amounts of sugar into a healthy and delicious recipe seemed impossible at first, but I think I nailed it. I am SO excited to share this healthified orange muffin recipe with you!
Instead of using orange juice, fats, sugars, and food coloring, I used healthy ingredients, sugar subs that have no blood sugar impact. And pumpkin puree adds a lovely orange color!

For flavoring the recipe with a bright, fresh orange flavor, I love the NOW Orange Essential Oil. Their oils are affordable, taste great, and are lab tested for purity. And they have NO idea who I am…I’m not getting paid to tell you that. I’m just a very happy customer. If you’re concerned about ingesting, I use them safely according to the dietary guidelines for essential oils in foods-you can read more about that here. You can also use orange extract or flavoring, but I really prefer this option.

Printable Low Carb Orange Muffin Recipe & Pin
FP Version (low fat, low carb)- ⅓ cup Trim Healthy Mama baking blend
- 3 Tablespoons egg white
- 1 teaspoon orange extract or flavoring or 5 drops pure orange essential oil
- 2 teaspoons Trim Healthy Mama Sweet Blend or 2 packets Truvia or sweetener of your choice to taste
- 2 Tablespoons 0% plain Greek yogurt
- ½ teaspoon baking powder
- 1 Tablespoon canned pumpkin (NOT pumpkin pie mix)
S Version(low carb & healthy fat) - ⅓ cup baking blend
- OR 2 Tablespoons flax seed meal + 1 Tablespoon coconut flour
- 1 egg
- 1 Tablespoon butter
- 2 teaspoons Trim Healthy Mama Sweet Blend or 2 packets Truvia or sweetener of your choice to taste
- 1 Tablespoon 0% plain Greek yogurt
- 1 teaspoon orange extract or flavoring or 5 drops pure orange essential oil
- ½ teaspoon baking powder
- 1 Tablespoon canned pumpkin (NOT pumpkin pie mix)
Streusel - 1 Tablespoon protein powder
- 1 teaspoons butter, chilled or room temperature
- 2 drops orange essential oil
- 2 teaspoons sweet blend or 2 packets Truvia or sweetener of your choice
- Mix all muffin ingredients in a small ramekin or mug with a fork.
- Mix streusel ingredients in a small dish, cutting in the butter with a fork.
- Top muffin with streusel mix (use half of streusel mix for FP version to keep it lower fat)
- Microwave for 90 seconds or bake for 30 minutes or 15-18 minutes in 2-3 muffin tins in a *350 oven. Play with your baking time to get these just set but not dry, especially if you're using the lower fat recipe. Microwaves and ovens vary, so check frequently with your fist time baking and make a note right here on the recipe for next time. 🙂

I have everything I need to make the FP version, except the baking blend. Could ground up old fashioned oats work? Would that still be FP?

Sadly, no…oats are a grain, so that would point you toward an E. But you can find baking blend recipes online that would work!

Gwen, I just made this for the first time this morning. I made the “S” version. DELISH! I have a question…if I wanted to make a batch of these, say six at a time, would I just take all the ingredients times 6? Or is there a different conversion for this? I am usually not much of a baker – but I love muffins and this is my favorite so far!

I would probably just multiply everything x6 but the baking powder. That I would probably do 2 tsp for the whole batch. 🙂

Oh, bless you, Gwen! These fuel pull muffins are AHHH-MAZING! I do believe that we have a commonality in being blessed with that special gift – finding the absolute worst junk food. When I try to print a recipe everything will print except the recipe! I tried highlighting and chose “print selection” and it didn’t work either. If I select the print button on the upper right of the recipe then it prints the logo on one page and then the picture of the recipe on another page and no recipe! How do you make it work?

How did I just now find this . . .Oh, I know – from a link on largefamilytsble of 100 FP RECIPES. These are AMAZING. I made a double recipe early this morning and just now had one for dessert this evening. Rhetorically, how can something this moist, sweet and delicious be low carb and low fat! Been THM-ing for well over 4 years and I’ve made and eaten dozens of different muffins. About a year ago I tried this microwaved one and it’s by far become my fav. Many times I have preferred oven baked, but not this one. I make a big batch (12 times the recipe) of the FP version every couple weeks. Are any of your other muffins based on this one? I got excited for a minute because this was tagged egg free. I’m wanting to start THM but after my fourth kids I became very sensitive to eggs. I’ve been increasing liquids a bit and adding appple cider vinegar to my regular recipes. Do you think that would work for the THM recipes?
